Black Quinoa and Vegetable Salad

  • 2 cups Cooked black quinoa
  • 4 cups Baby spinach
  • 1 Fennel bulb
  • 1 Red capsicum
  • 1 Avocado
  • 1-2 Handfuls of parsely
  • 1 Large lime
  • 2 tablespoons Olive oil
  • Sea salt and pepper
Instructions
  1. Wash all vegetables well

  2. Finley slice fennel and capsicum, add to spinach and quinoa

  3. Dice avocado and to salad bowl

  4. Roughly tear parsley according to taste and add to bowl

  5. Dress the salad with fresh lime juice, olive oil, sea salt and pepper
