Immune Boosting Soup

Ingredients
  • 1 red onion diced
  • 1/2 head of brocoli diced
  • 1 red capsicum diced
  • 1 large sweet potato diced
  • 1/4 bunch of celery diced
  • 2 carrots peeled and diced
  • 6 brussel sprouts diced
  • 4 cloves garlic crushed
  • 3 tablespoons olive oil
  • 1 teaspoon ground tumeric
  • 6 cups vegetable or chicken stock
  • 500 grams organic chicken cubed
Instructions
  1. In a frying pan, heat 1 tbsp. olive oil, add cubed chicken and cook until slightly brown.

  2. Remove from heat and keep aside

  3. In large pot heat 2 tbsp. of olive oil, add the diced onion, crushed garlic and turmeric, sauté until soft

  4. Add all diced vegetables and a splash of stock, stir frequently, cook until vegetables become soft

  5. Add the rest of the stock, stir well. Add chicken and cook over a medium heat for 30-40 minutes
