In a frying pan, heat 1 tbsp. olive oil, add cubed chicken and cook until slightly brown.
Remove from heat and keep aside
In large pot heat 2 tbsp. of olive oil, add the diced onion, crushed garlic and turmeric, sauté until soft
Add all diced vegetables and a splash of stock, stir frequently, cook until vegetables become soft
Add the rest of the stock, stir well. Add chicken and cook over a medium heat for 30-40 minutes
