Overnight Carrot and Apple Bircher Muesli

  • 2 cups rolled oats
  • 1/2 small carrot
  • 1/2 teaspoon cinnamon
  • 1 tablespoon sunflower seeds
  • 1/2 apple (green or red)
  • 3 tablespoons coconut yogurt
  • 1 tablespoon vanilla protein powder
  • 1/2 cup unsweetened almond milk
Instructions
  1. Finely grate the carrot and 2/3 of the apple, leave 1/3 apple for sliced topping

  2. Combine the oats, grated carrot, grated apple, cinnamon, sunflower seeds and 125ml (1/2 cup) of almond milk in a small bowl. Cover and place in the fridge overnight to soak.

  3. To prepare the yogurt, mix the coconut yogurt and protein powder in a small bowl until the protein powder is mixed in well.

  4. Before serving, top the overnight bircher with the yoghurt, extra sliced apple and extra sunflower seeds if desired
