Finely grate the carrot and 2/3 of the apple, leave 1/3 apple for sliced topping
Combine the oats, grated carrot, grated apple, cinnamon, sunflower seeds and 125ml (1/2 cup) of almond milk in a small bowl. Cover and place in the fridge overnight to soak.
To prepare the yogurt, mix the coconut yogurt and protein powder in a small bowl until the protein powder is mixed in well.
Before serving, top the overnight bircher with the yoghurt, extra sliced apple and extra sunflower seeds if desired
