Raw Vegetable and Berry Salad

Ingredients
  • 1 Broccolini stalks chopped
  • 2 Celery stalks chopped
  • 1 Large carrot Pealed and chopped
  • 1 Large purple carrot Pealed and chopped
  • 1/2 cup Blackberries or Blueberries
  • 1/2 Avocado diced
  • 2 tablespoons Pumpkin seeds
  • 2 tablespoons Pine nuts
  • Juice of 1 lemon
  • Salt and pepper
Instructions
  1. Wash vegetables and berries well before use

  2. Place all chopped ingredients and berries into a bowl and tossĀ (using a mandoline food slicer will make chopping a breeze)

  3. Sprinkle pumpkin seeds and pine nuts over ingredients and toss

  4. Dress the salad in fresh lemon juice and season with salt and pepper
