Salmon Cauliflower Mash and Steamed Greens

Ingredients
  • 2 Salmon fillets
  • 1 Bunch broccolini washed ends removed
  • 1 Bunch green beans washed ends removed
  • 1 cup Baby spinach
  • 1 Lemon washed
  • 1/2 Head cauliflower florets
  • 1 tablespoon Olive oil
  • 30 grams Danish feta (Optional)
  • 1/2 teaspoon Sea salt
  • 1/2 teaspoon Black pepper
Instructions
  1. Place cauliflower and greens in a steamer / steaming basket and steam until tender (approx 15 min)

  2. Heat 1 teaspoon oil in a non-stick pan to medium

  3. Season salmon with salt and pepper

  4. Place salmon in pan skin side down and cook for 4-5 minutes, until about 70% cooked

  5. Turn and cook for another 3-5 minutes, salmon should be slightly pink in the middle

  6. Place steamed cauliflower and feta in a food processor and whip until it reaches a mash consistency

  7. Serve salmon, cauliflower mash and greens seasoned with salt and pepper and a squeeze of fresh lemon
