Turkish Inspired Chicken Salad

Ingredients
  • 1 cup cooked quinoa
  • 1/3 cup chopped coriander
  • 2 tablespoons olive oil
  • half lime finely chopped
  • 2 chicken breasts shredded
  • 1/2 red onion sliced
  • 1/4 flaked almonds toasted
  • 1/2 pomegranate seeds remove
  • 1/2 cup Greek yogurt optional
  • 1/3 cup figgs chopped
Instructions
  1. Cook quinoa (rice cooker works well) and set aside to cool

  2. In a large bowl combine quinoa, coriander, oil and lime, mix well and season to taste

  3. Add chicken, onion, figs, almonds and pomegranate seeds, toss well

  4. Serve topped with Greek yogurt (optional)
