Broccolini and Lentil Salad

Ingredients
  • 2 Bunches broccoli, trimmed
  • 1 Bag baby spinach
  • 400 grams Canned brown lentils, rinsed, drained
  • 6 Spring onions, ends trimmed, thinly sliced
  • 1 teaspoon Chilli paste
  • 1 tablespoon Minced garlic
  • Balsamic vinegar
  • Olive oil
Instructions
  1. Chop Broccolini and steam broccoli until slightly tender

  2. Rinse lentils and place in salad bowl

  3. Add 1 tbsp. oil in a large non-stick frying pan over medium heat

  4. Add the spring onions, chilli and garlic, stirring occasionally until spring onions collapse

  5. Add the steamed broccolini and cook through, stirring occasionally for approx 3-5 min

  6. Add the cooked broccolini and spinach to the lentils, stir wel

  7. Mix vinegar and 1 tbsp. of olive oil together, whisk well

  8. Drizzle over broccolini and lentils, toss and serve
