Crunchy Curry Cauliflower Rice

  • 1 head cauliflower small
  • 1/2 cup dry roasted mixed nuts
  • 3 spring onions
  • 1/2 tablespoon curry powder
  • 2 teaspoons tumeric powder
Instructions
  1. Cut cauliflower florets into 3cm pieces and steam until tender but still slightly firm (approx. 5-7 min) minutes

  2. While the cauliflower is steaming chop spring onions into 5 cm pieces

  3. Place steamed cauliflower, spring onions, roasted nuts, curry powder and turmeric into food processor or thermomix and pulse until ingredients are chopped fine and resemble the consistence of rice.

  4. erve as a side dish to fish or chicken or enjoy as a vegetarian main meal.
