Simple Eggs and Baby Greens

Ingredients
  • 2-4 Organic Eggs
  • 1/2 cup Baby Green Peas
  • 1 Cup cup Baby Spinach
  • 1 tablespoon Olive Oil
  • Cracked Pepper
  • Grated Cheese (Optional)
Instructions
  1. In a saucepan boil peas for 3 to 5 minutes
  2. Crack eggs into a medium bowl and beat until light and fluffy.
  3. Heat frying pan with oil, place eggs and fold/ stir continuously until eggs are 80% cooked.
  4. Place spinach and cooked peas into frying pan, stir until spinach collapse and eggs are fully cooked.
  5. Serve in a bowl with grated chesse, cracked pepper and salt.
