
Simple Eggs and Baby Greens

In a saucepan boil peas for 3 to 5 minutes

Crack eggs into a medium bowl and beat until light and fluffy.

Heat frying pan with oil, place eggs and fold/ stir continuously until eggs are 80% cooked.

Place spinach and cooked peas into frying pan, stir until spinach collapse and eggs are fully cooked.

Serve in a bowl with grated chesse, cracked pepper and salt.
