Veggie Cauliflower Rice

  • 1/2 head cauliflower
  • 3 spring onions chopped
  • 2 carrots
  • 1 red onion
  • 1 cup mushrooms sliced
  • 1/2 cup baby peas
  • 1/2 cup sweet corn
  • minced garlic
  • sesame oil
  • tamari soy sauce
  • chill flakes optional
  • feta optional
  1. Peal and roughly chop carrot and red onion

  2. Place cauliflower florets plus chopped carrots and red onion into a food processor or thermomix and pulse until ingredients are the size and texture of rice

  3. Preheat frying pan, once hot add 1 tbsp. sesame oil

  4. Add minced garlic, cauliflower, red onion, carrot, sliced mushrooms, chopped spring onions, baby peas and corn kernels to the hot pan, toss well

  5. Add tamari soy sauce and chilli flakes to taste preference, toss and cook until ingredients become tender.

  6. Place in bowl and crumb feta (optional)
