This is my go to post training breakfast option. It contains the perfect balance of protein carbs and healthy fats. It is also the perfect guilt free pancake for those mornings you feel like a treat.

Instructions

  1. Place eggs in a bowl and beat well

  2. Add quinoa flakes (or rolled oats), mashed banana and cinnamon to eggs, mix well

  3. Heat frying pan to a high heat, add coconut oil evenly to pan

  4. Add mixture to hot frying pan, cook pancake until golden brown (just like other pancakes)

  5. Spread coconut oil, almond butter or tahini on top of cooked pancake

  6. Top with fresh fruit and yogurt
