Whenever you choose to eat a salad as a main meal you should make it the perfect opportunity to get more vegetables into your diet. This vegetable packed tuna salad is a great lunch option guaranteed to keep you full whilst fuelling you through your afternoon.

Teresa’s Terrific Tuna Salad

  1. Place tuna steak into a hot frying pan and cook 2-3 min each side

  2. Wash all salad ingredients, drain and dry well 

  3. Slice snow peas, zucchini, red capsicum, tomato, avocado and red onion according to preference 

  4. Place roquette and sliced snow peas, zucchini, red capsicum, tomato, avocado and red onion into a large salad bowl and toss

  5. Drain asparagus and broccoli from boiling water then toss into the salad

  6. Place tuna chunks over the top of the salad

  7. Add lemon juice and olive oil according to taste and toss salad well

  8. Season with sea salt and pepper and serve
