Quick, easy and delicious, these protein packed zucchini fritters can be served as breakfast with smacked salmon, lunch with a side salad or as a pre-made healthy snack.

Zucchini Fritters



  1. Coarsely chop spring onions and parsley, set aside

  2. Coarsely grate the zucchini. Place in a colander and squeeze out as much excess moisture as possible. Transfer to a bowl

  3. Add parsley, spring onion, salt, pepper, lemon zest, eggs and almond meal, mix well

  4. Heat 1 teaspoon olive oil in a non-stick frying pan over medium- high heat

  5. Add 2 to 3 even portions of zucchini mixture to pan

  6. Cook for 1-2 minutes each side or until golden and cooked through

  7. Transfer to a plate

  8. Repeat with remaining olive oil and remaining zucchini mixture

  9. Enjoy
